Traditionally, the Passover table should consist of 40 different dishes.

This number is determined by the number of days of Great Lent.

Of course, they don't cook so many dishes now, the main ones remain three dishes: dyed eggs, paska, meat dishes, salads won't hurt either.

Paska is the most important holiday pastry.

In order for it to be tasty, you need to carefully follow the recipe for its preparation.

Classic paska recipe

Ingredients for making classic paska.

For the dough:

  • 0.5 l of milk, preferably 3.2%;

  • 50 g of "live" pressed yeast;

  • 1 Art.

    granulated sugar;

  • 100 g of wheat flour.

For the dough:

  • 4 eggs;

  • 2 egg yolks;

  • 1 kg of wheat flour;

  • two pinches of salt;

  • 200 g of butter, preferably 82% fat;

  • 300 g of granulated sugar;

  • 2 bags of vanilla sugar;

  • 50 g of dried raisins;

  • 50 g of colorful candied fruits;

  • grated peel of one citrus fruit.

How to cook a classic paska in the oven

  • Prepare steam.

    To do this, heat the milk to 35° C. Add the crushed yeast to the milk, you can use your hands, and stir it until it is completely dissolved in the milk.

    Pour in milk 1 tbsp.

    sugar and 100 g of sifted flour.

    Mix the mixture well and leave it warm for half an hour. 

  • When the foam increases by 2-3 times, add the rest of the flour.

    Mix the eggs, yolks, sugar and salt separately and carefully introduce the egg mixture into the prepared dough.

    The finished dough should stand for at least 1 hour. 

  • Soften the oil well, you can submerge it in a water bath.

    Pour the melted butter into the dough.

  • Add pre-soaked and swollen raisins, vanilla sand, washed and dried candied fruit, and grated citrus peel to the dough.

  • Mix the dough with your hands until it becomes soft, viscous, but not sticky. 

  • Prepare a capacity for the dough in advance, spread it with a paper napkin dipped in oil.

    Put the dough in a bowl and cover with a thin towel so that it does not air out.

    It should stand in the heat, in an hour the mass will double.

  • When the dough rises, you need to knead it again.

    With oil-moistened palms, separate the ball from the mass, twist it slightly in your palms and place it on the bottom of the mold.

    Put the dough in the heat for another 40 minutes.

  • Place the dough in an oven preheated to 170 degrees and bake for 30-50 minutes.

    The time depends on the diameter of the form in which the paska is baked.

    Its readiness is checked with a wooden skewer.

  • After cooling, decorate the top of the paska with glaze and confectionery sprinkles.

A recipe for meat baked in the oven

Menu for Easter 2023

Ingredients for cooking baked meat:

  • 2 kg of pork tenderloin;

  • 1 tablespoon of salt;

  • a medium-sized head of garlic;

  • three bay leaves;

  • it is best if there is a special set of spices "For meat".

Cooking baked meat in the oven

  • It is advisable to rinse the tenderloin under cold water.

  • Peel the garlic.

    We cut part of it into thin pieces for spying, the rest is finely chopped for rubbing the meat on top. 

  • Salt well the meat that is glass.

    We make punctures in it deeper than the middle of the piece and begin to sprinkle with pieces of garlic with a bay leaf.  

  • Rub the meat with chopped garlic and generously sprinkle it with spices on top.

    You need to sprinkle it so that the meat looks like it is breaded.

  • Transfer the meat to a baking dish.

    Cover it with cling film and put it in a cold place for 4 hours.

  • We bake the meat on the lower level of the oven at a temperature of 180-200 degrees for 1.5-2 hours, of course without a film.

  • We pierce the meat with a toothpick to understand its readiness.

    If a clear liquid flows out - it is ready, if the meat bleeds - you need to bake it further.

A recipe for krucheniki with prunes

Ingredients for making krucheniki with prunes

  • 500 g of pork;

  • 200 g of prunes;

  • 200 g of hard cheese;

  • meat broth;

  • salt, pepper to taste

Cooking krucheniki with prunes

  • As usual, we prepare pork butts.

  • Cut the soaked prunes into pieces.

  • Grate the cheese.

  • Put prunes and cheese on the prepared batik.

  • Wrap the rolls.

    To prevent them from unfolding, secure the edges with toothpicks.

  • We put the krucheniki in a pan, pour them with broth.

  • We put the capacity with krucheniki in the oven for 30-35 minutes

Lavash with red fish

Ingredients for cooking lavash with red fish

  • one pita bread;

  • 180-200 g of grated cream cheese, you can replace it with another;

  • 200 g of lightly salted salmon or salmon fillet;

  • greens - parsley, cilantro, dill; 

  • 1 lemon.

Preparation of a roll with pita bread and red fish

  • Cut the fish into pieces. 

  • Add chopped greens and cheese to it, mix well.

    Sprinkle with squeezed lemon juice.

  • Spread the fish with cheese and greens evenly throughout the pita bread.

  • Roll pita bread with fish into a roll and wrap in plastic wrap.

    Put the roll in the refrigerator for 20 minutes.

  • Cut the roll into pieces.

  • 350-400 g of chicken breast;

  • 300 g of champignons;

  • 300 g of Beijing cabbage;

  • one head of onion; 

  • 1 medium-sized tomato;

  • 150 g of hard cheese;

  • mayonnaise to taste;

  • pinch of salt

Preparation of Beijing and chicken salad

  • Shred the Beijing cabbage.

  • Grate the cheese.

  • Cut the champignons into medium-sized pieces;

  • Cut the onion into slices;

  • Cut the tomatoes into medium-sized pieces;

  • Combine cabbage with cheese, champignons, onions, tomatoes, salt and season with mayonnaise.

  • 300 chicken livers;

  • 300 g of mushrooms;

  • 3 potatoes;

  • 3 eggs;

  • 150 g of hard cheese;

  • 1 bulb;

  • 1 carrot;

  • salt, pepper to taste

  • oil.

Preparation of salad with chicken liver and mushrooms

  • Boil the washed potatoes and carrots until ready.

  • Boil the eggs.

  • Cut the onion into rings.

  • Cut the champignons into pieces.

  • Fry champignons with mushrooms in oil;

  • Fry the chicken liver in oil.

Lay out the ingredients of the salad in the following layers:

The first layer - grated boiled potatoes with mushrooms and onions, smeared with mayonnaise;

The second layer - grated boiled carrots, fried liver with onions, smeared with mayonnaise;

The third layer - grated cheese with mayonnaise;

Sprinkle grated eggs on top.
