Why aflatoxins are dangerous for health

The family of aflatoxins includes four representatives B1, B2, G1, G2.

Aflatoxin B1 is the most dangerous for humans.

It is also the most common.

It is a hepatotropic poison that primarily affects liver tissue.

Ukrainian doctors

note

that it is possible to determine the presence of this substance only during laboratory analysis using special equipment.

Aflatoxins can form in food products at any temperature.

Even if the products are stored in refrigerators.

However, most often they appear at a humidity of 80-85% and at a temperature of 20-22 degrees.

Aflatoxins can be detected in legumes, cereals, sunflower seeds, nuts, coffee beans and cocoa beans, bread.

Even in small amounts in milk, meat, eggs.

They mostly occur in products from tropical countries.

When aflatoxins enter the body, they are concentrated in the liver.

A day after exposure, 20-30% of them remain.

Fatty degeneration of the liver and its necrosis occur during acute aflatoxicosis.

In humans, coordination disorders, convulsions, paresis, ascites, hemorrhages, kidney necrosis, diarrhea are also noticeable.

During subacute and chronic aflatoxicosis, cirrhosis occurs and primary liver cancer develops.

Hepatocarcinomas can occur both with long-term intake of small doses and with simultaneous intake of a large amount of the substance.

According to doctors, aflatoxin B1 is the strongest of all chemical carcinogens.

Its mutagenic (cell change) and teratogenic (effect on the fetus) effects on the body were established.
