Mozzarella cheese, which has a milder flavor and can present a perfect drawing effect, is very popular among Chinese people. The shelf life of mozzarella cheese is short, so we are optimistic about the potential of this cheese product in the domestic market. The Animal Research Institute of the Council of Agriculture has developed a complete mozzarella cheese production process for the industry to refer to.

Affected by the Westernization of diet, cheese has already entered the dining table of Chinese people. Guo Qingyun, a researcher of the Animal Research Institute, said that a French study found that there are more than 6,000 types of cheese, and this time the Animal Research Institute chose to develop mozzarella cheese. The manufacturing process focuses on the short shelf life of this item of cheese, which is conducive to local production.

Huang Zhenfang, director of the Animal Testing Institute, pointed out that the production technology of mozzarella cheese is divided into a professional version and a simple version. The professional version is for technology transfer and application by the industry, and the simple version is used by various institutions for food and agriculture education, research and promotion, or school curriculum activities.

Mozzarella cheese originated in Italy. According to the Institute of Veterinary Testing, its production focuses on heating and stretching technology, so as to achieve the effect of bright appearance and elastic texture.

Its mouthfeel is elastic, and its flavor is light and mild. It can be eaten directly or used in cooking, especially the attractive scene of stretching after baking (such as gratin and pizza), which impresses consumers deeply.

The Animal Research Institute pointed out that the domestic cheese industry has also begun to sprout and develop. Compared with liquid dairy products, research on cheese products is less.

In order to meet the technological needs of the industry and the curiosity of the public, the Institute has invested resources in research to establish various cheese technologies and knowledge for domestic industry applications.
