eggs - 10 pcs.
avocado - 1 pc
lemon juice - 1 tablespoon
mayonnaise - 2 tablespoons
Dijon mustard - 1 tablespoon
spicy sauce sauce (optional) - 1 teaspoon
Salt and freshly ground black pepper
green onion - 2 tablespoons
Preparation
Peel the boiled eggs and cut them in half lengthwise.
Remove the yolks and place them in a small bowl.
Transfer the avocados to a bowl with the egg yolks and stir in the lemon juice, mayonnaise, mustard and hot sauce (if using).
Mash the mixture with a fork until smooth.
Add salt and pepper to taste.
Spoon the mixture onto the egg white halves and garnish each with a few cloves of green onion.
Eggs can be served immediately or stored for up to a day in the refrigerator in an airtight container.
Advice
If you are cooking in advance, add the green onions before serving.
