This is a very traditional bread for Bessarabia.

And not only that - in many regions of Ukraine, similar cakes are baked or fried.

They are called differently.

But there are many similar products - gezleme (more often with a filling and a little from another dough), plachindi (also with a filling, in some villages it is on kefir, and not on water with oil and eggs, as I cook), palyanichki, cakes.

I'm sure there are other varieties of this bread.

Cakes (composition):

  • 3 -3 1/4 cups of wheat flour

  • 1 egg

  • 1 cup of 2.5% fat kefir or homemade sour milk

  • 1 tablespoon of oil in the dough

  • 1/2 teaspoon of soda

  • 2 pinches of salt

  • refined oil for frying cakes

How to cook

Knead the dough by mixing all the ingredients.

In its finished form, it should not be too tight - softer than for dumplings.

Cover and let rest for 20-30 minutes, on the table, without the refrigerator.

I also lubricate the dough with oil so that it does not dry out.

Divide the dough into about 8-10 parts, roll them into balls.

On a table greased with a little oil, roll out each such ball to a thickness of about 5-7 mm.

Not very subtle.

Heat well-refined oil for frying in a pan.

Fry the cakes until golden on both sides.

If it rises a lot, prick it with a fork.

As soon as it's ready, take it off, sprinkle it with the aromatic spice miridia and add a little salt on top.

Next, enjoy the unsurpassed taste of a freshly toasted tortilla and the aroma of Bessarabia.

By the way, you can roll out the dough not on an oiled table, but on a floured table.

But before frying, you should shake the flour well, because it will burn in the oil.
