Olivier with chicken and baked vegetables

The main winter salad is, of course, olivier.

We prepare it every year for the New Year or just as a treat for guests.

Simply put, no holiday is complete without this dish.

Everyone prepares olivier in their own way: someone does not add carrots, someone adds an apple, and someone uses corn instead of peas.

We suggest you prepare this salad in a completely different way - using baked vegetables and chicken fillet.

Believe me, it will be very tasty!

Ingredients:

  • chicken fillet - 1 pc.

    (if small, then 2)

  • carrots - 2-3 pcs.

  • potatoes - 4 pcs.

  • pickled cucumbers - 4-5 pcs.

  • eggs - 4-5 pcs.

  • frozen peas

  • homemade mayonnaise

  • Svan salt

  • a mixture of peppers

A recipe for real Olivier

In one of the first versions, published in the magazine "Our Food", it was stated that potatoes, fresh cucumbers, fried grouse, capers, and olives were added to the salad before.

Provençal and Kabuli sauces were used for dressing.

This salad takes us a little back to the days of the "real" Olivier.

True, instead of crayfish, there are no shrimps or grouse in this Olivier, but no matter what you do, you can't get those times back.

Ingredients:

  • 10 g of carrots

  • 10 g of boiled potatoes

  • 10 g of boiled green peas

  • 2 quail eggs, peeled and chopped

  • 15 g of smoked veal tongue, chopped into cubes

  • 15 g cocktail shrimp, cut into pieces

  • 10 g of grated Parmesan

  • 40 g of avocado pulp

  • 1 tsp.

    fresh lemon juice

  • salt, fresh thyme and freshly ground black pepper to taste

For decoration:

  • 1 leaf of radicchio lettuce

  • 1 shrimp 16/20

  • 1 arrow of onion, chopped

  • 1 tsp.

    red caviar

  • 1 tsp.

    olive oil

  • 1 sprig of dill

On the one hand, the dietary version is easy to prepare, on the other - it is no worse than its rich "relatives".

In addition, the salad for those observing the fast can be very strict in terms of ingredients, and with dairy products and/or eggs.

Ingredients for 4 servings:

  • 4 potatoes

  • 1 carrot

  • 200 g of vegetarian sausage

  • 100 g of canned peas

  • 2 pickled cucumbers

  • 1 fresh cucumber

  • 1 sweet and sour apple

  • 150 g of soft tofu

  • 1 bunch of green onions

  • 0.5 tbsp.

    lean mayonnaise

  • 5-10 olives

  • salt, ground black pepper
